Ingredients
2 (12 oz) cans wild salmon in water, drained
2/3 cup almond flour or gluten free bread crumbs
2 TBSP lemon juice
2 large eggs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried minced onion
1/2 tsp fine sea salt
2 TBS olive oil
Directions
In a medium-sized bowl, mix the salmon with the crumbs, eggs, lemon juice, and spices. Form patties. Heat the oil in a large skillet. When the oil is hot, place the patties into the pan in a single layer, working in batches if necessary, and fry for 3-4 minutes per side until golden brown. Keep warm in oven if not serving immediately.
Notes
This is a very easy, kid-friendly recipe. You can easily substitute tuna for salmon.
