Ingredients
3/4 cup old fashioned oats
3/4 cup walnuts (or substitute other nut)
1/2 cup raw cashews
2 TBSP honey
1/2 tsp vanilla extract
1 TBSP coconut oil
1/4 cup chocolate chips (dark or 70% cacao)
Directions
1. Grind the oats and nuts in a food processor for 1 minutes, then add the honey, vanilla, coconut oil, and chocolate chips. Mix until combined.
2. Using a 1 tsp measure, roll into balls.
3. Freeze, placing the balls in a single layer on a cookie sheet and freeze for 20-30 minutes. Move to a freezer bag and keep in freezer if not serving immediately.
