Ingredients
¼ cup chia seeds
¾ cup coconut milk
Pinch cinnamon
1 tablespoon sliced walnuts, hemp seeds, or hazelnuts
½ cup berries or sliced kiwi
Toasted unsweetened coconut (optional)
Touch of maple syrup (optional)

Directions
In a medium bowl (or jar), combine chia seeds, milk, and a pinch of cinnamon. Stir for a couple minutes until very well combined and starting to thicken. Add toppings of your choice. You can enjoy right away or you can place your bowl in the refrigerator overnight. The longer you let the pudding sit, the thicker and creamier it will be, and the softer the chia seeds will be.
