Ingredients
2 cups brown rice, rinsed and soaked if desired
2 1/2 cups water
1 can coconut milk
1/2 teaspoon salt
Directions
Wash and drain rice. Bring water, coconut milk, and salt to a boil. Add rice. Reduce heat to low and cover. Simmer 45 minutes until rice is cooked.
