Ingredients
2 eggs
1 cup coconut milk
1 cup water
1/4 cup coconut oil, melted
1 tsp. cinnamon
1 tbsp. baking powder
1/2 tsp. baking soda
1 cup shredded unsweetened coconut
8 oz. organic, unsweetened applesauce
2 cups quinoa flour
1/2 cup blueberries
Directions
1. Place all the ingredients into a mixing bowl and mix by hand with a whisk. DO NOT OVER-MIX. 1-2 minutes max! (Mix should have a few lumps in it.)
2. Using a ladle, scoop the mix and pour onto a hot pancake griddle. Cook until golden brown on both sides.Serve with side of fresh fruit like strawberries or grilled bananas. Enjoy!
