Crunchy Chinese Chicken Salad

Ingredients:
1 rotisserie chicken
3 cups shredded romaine lettuce
2 cups shredded purple cabbage
1 cup shredded carrots
1 bunch green onions chopped
1 cup fresh cilantro
1/2 cup canned mandarin oranges – well drained
1/4 cup raw slivered almonds

Asian Dressing:
¼ cup olive oil
¼ cup balsamic vinegar
¼ cup coconut aminos
2 tbsp sesame oil
Hot chili pepper flakes to taste
1 tbsp raw honey
1/4 tsp each sea salt & pepper to taste
1/3 cup of toasted sesame seeds

Directions:
Lightly toast the sesame seeds in a dry pan on stove on low for 5 minutes.
Add chopped and sliced veggies to a large bowl. Add mandarin oranges and almonds. Shred chicken with a fork or cut thin with a knife and add to salad just before ready to eat. Combine dressing ingredients and mix well. Toss with salad before eating. Add toasted sesame seeds on top.

Notes:
You can store the dressing in a tightly sealed container for up to two weeks.
