Carob Coconut Bites

Ingredients
¾ cup carob powder (can be raw or toasted)
1/2 cup virgin coconut oil
1/2 cup shredded unsweetened coconut (optional)

Directions
Use a mini-muffin tin or a silicon bite tray.

In a small pot over lowest possible heat, melt the coconut oil.

Add carob powder and stir well. Add shredded coconut if using. Pour the mixture into the muffin tin or container and refrigerate or freeze until firm, at least 2 hours. Store, covered, in the refrigerator or freezer.

Enjoy when you feel like you need something sweet!
