Ingredients
4 TBSP avocado oil
1 TBSP white wine vinegar or red wine vinegar
1 tsp Celtic Sea Salt
¼ tsp black pepper
1 tsp garlic powder
1 tsp dried thyme
1 pound fresh shiitake mushrooms rinsed and dried; stems removed if you wish (see notes)
2 TBSP parsley chopped, for garnish

Directions
Preheat your oven to 400°F. Line a large, rimmed baking sheet with high-heat-resistant parchment paper.

In a large bowl, whisk the oil, vinegar, kosher salt, black pepper, garlic powder, and dried thyme. Add the mushrooms and toss to coat. Transfer the coated mushrooms to the prepared baking sheet. Bake the mushrooms until tender, for about 20 minutes. Garnish them with chopped parsley and serve.
