Easiest, Most Delicious Chocolate Chip Banana Bread

½ cup coconut oil

¼ cup coconut sugar

2 tsp pure vanilla extract

2 cups gluten-free flour (I use 1 cup tigernut flour and 1 cup all purpose GF flour)

1 tsp baking soda

1 tsp salt

2 bananas (mashed) 


1.  Preheat oven to 325 degrees.

2.  Lightly grease loaf pan with coconut oil.

3.  Mix oil and sugar and vanilla until smooth.

4.  Sift in flour, baking soda and salt.

5.  Blend in mashed bananas.

6.  Stir in chocolate chips.

7.  Pour batter into prepared pan.

8.  Bake for 45 minutes.
